Arsura
Arsura di Gilletto 2021 is a compelling white wine from Western Sicily, artfully crafted from a co-fermentation of Grillo (80%) and Zibibbo (20%) grapes. Grown organically on a limestone hill overlooking the Mediterranean in Mazara del Vallo, this wine offers both structure and elegance, matured for over two years in steel before bottling. With just 5,333 bottles produced, it’s a true expression of terroir, coastal breeze, and the soul of Sicilian viticulture.
Tasting tones
Arsura opens with a vibrant and structured profile that balances its notable acidity with gentle aromatic complexity. Vineyard
The Gilletto vineyard, perched on a limestone hill near Mazara del Vallo in Western Sicily, is cultivated without chemicals, relying on organic practices and drip irrigation. Vines are trained using Guyot pruning and spaced at 5,000 vines per hectare, yielding about 70 quintals per hectare. The Mediterranean climate and natural soil composition give this wine its distinct minerality and coastal freshness.
Winemaker’s notes
Grapes are co-harvested and co-fermented to express the harmony of Grillo and Zibibbo. The wine undergoes fermentation in steel for two weeks, then rests on the lees for 45 days to enhance texture and complexity. Maturation continues in steel vats for two years before bottling, followed by six months of aging in bottle. This deliberate process delivers a wine with structure, evolution potential (5–7 years), and extraordinary pairing versatility—from seafood to white meats.
