Giallo Ginestra

Tasting tones
Giallo Ginestra opens with a bright bouquet of citrus and floral notes, leading into a crisp and clean palate. Vineyard
Grown on the hills of Salemi in the heart of the Province of Trapani at 450 meters (1,500 feet) above sea level, the Catarratto grapes are cultivated organically with no chemical use. Vines are espalier-trained with Guyot pruning at a density of 5,000 vines per hectare and a yield of 70 quintals per hectare. Drip irrigation supports the vines, allowing for healthy growth and balanced fruit development in this highly renowned Sicilian terroir.
Winemaker’s notes
Fermented at controlled temperatures between 14–16°C with selected yeasts, Giallo Ginestra is matured in steel tanks at low temperatures to preserve the natural CO₂ developed during fermentation. This careful method of vinification results in a light frizzante texture and expressive freshness that captures the essence of the Catarratto varietal. Intended to be enjoyed young, it showcases the purity and vitality of organic Sicilian winemaking.
