Vineyard

Sourced from the sun-drenched hills of Salemi in Western Sicily, the Merlot grapes grow at an altitude of 450 meters above sea level in a region celebrated for its centuries-old winemaking heritage. The vineyard is cultivated organically without chemical intervention, using espalier-trained vines and Guyot pruning. Drip irrigation supports a balanced yield of 70 quintals per hectare, ensuring concentrated fruit and high-quality production.

Winemaker’s notes

Harvested and vinified with care, the grapes undergo destemming and an 8–10 day maceration period to extract color and aroma. Fermentation takes place at 26°C using selected yeasts, enhanced by frequent pump-overs and a delestage during fermentation. The wine completes malolactic fermentation and matures for four months in both steel and concrete silos, resulting in a well-structured, food-friendly wine built for both immediate enjoyment and cellaring up to five years.
